RED TAIL RIDGE WINERY

Red Tail Ridge is a boutique 35 acres 6,000 case winery in the Finger Lakes owned and operated by husband and wife team Mike Schnelle and Nancy Irelan. The limited production winery specializes in Riesling, Chardonnay, Blaufrankisch, Pinot, Dornfelder and Teroldego. Red Tail Ridge utilizes sustainable practices in their winegrowing process; and is the first LEED gold certified winery in New York State. All heating and cooling for wine production is provided by geothermal energy.

Production Notes: Machine harvested on September 13 & 19, 2012. Fermented in small lots, in stainless steel at 18 degrees celsius 820 cases produced. pH: 3.53, Total Acid: 5.95 g/l

Tasting & Pairing Notes: This wine is dominated by ripe honeydew and vanilla-laced pear aromatics with hints of mineral and hibiscus. In addition to concentrated mineral and melon, you will also find notes of golden apple and citrus, accompanied by a mild creamy texture on the mid-palate. Orange peel, a smidgeon of vanilla and crisp acidity add a delightful length to the finish. Food Pairing: Cheese, poultry, cream sauce, pasta, fish (white), fondue, ham, lobster and crab, pork and roasted vegetables. Also the perfect aperitif wine.

Production Notes: Stainless Steel fermentation. 852 cases produced. Residual sugar: 15.78 g/l, pH: 3.06, Total Acid: 6.9 g/l

Tasting & Pairing Notes: Orange oil, grapefruit, pineapple, and lime zest aromatics. More orange zest, fresh raspberry seeds, peach and wet stones on the palate. Full bodied mid-palate, balanced by vibrant acidity that provides a clean and lingering finish. This is a vegan-friendly wine.

 

2011 Estate Pinot-New- smallPinot Noir

Production Notes: Hand harvested on September 18 and 25, 2011. Small lot ferments with 2 punchdowns per 24 hours. Aged in older French oak barrels for 10 months. 689 cases produced. pH: 3.62, Total Acid: 5.3 g/l

Tasting & Pairing Notes: Dark red fruit, brown spice and wet earth in the nose, followed by cherry, cranberry, floral and savory notes on the palate. Slight traces of mint and leather. Reasonable acidity on the palate extends the finish.
