Tasting & Pairing Notes: Crisp and flowery with hints of mineral & citrus fruit. It is an elegant wine with a subtle bouquet including notes of beeswax, lemongrass, young pear and flint. Flavors of ripe apricot, honeysuckle, and white plum are followed by a lingering floral finish. Refreshing with fresh raw oysters and clams, sushi or tuna tartare. This wine also works well with delicately spiced foods like ginger chicken, lemongrass muscles, or horseradish cheese.
Production Notes: 540 cases made. Fermented in stainless steel tanks. Alcohol: 12%
Tasting & Pairing Notes: This is a lively, refreshing wine with tropical fruit and citrus flavors that will please most any palate. Cherry blossoms, lemon zest, and lychee aromas are present in this refreshing unoaked Chardonnay. Big and soft at first, a lemony acidity makes itself known and allows the wine to linger in the palate. This wine perfectly accents raw shellfish or steamed mussels. It also pairs well with chicken in a lemon sauce, and it could hold up to the heat of wasabi when enjoyed with sushi.
Production Notes: Aged 23 months in a mix of European oak, American oak, and French oak barrels. 43% Cabernet Franc, 41% Merlot, and 16% Cabernet Sauvignon Bottling date: March 1, 2011 Residual sugar: .05%, pH: 3.57, Total Acid: 5.8 g/l, Alcohol: 12.5%
Tasting & Pairing Notes: Medium-bodied and velvety, this blend of classic Bordeaux varieties offers flavors of cherry and currant with a subtle round finish. Allspice, cloves and coriander dominate the nose at first, then after some aeration notes of plum and blackberry join in with hints of turmeric and freshly ground pepper. This blend has a soft and round mouthfeel, rich smoky undertones, and a long finish. Enjoy this wine with lamb stew, osso buco, couscous and North African cuisine. For cheese pairings, match with Cumin Gouda and intense cheeses like Époisses or a sharp cheddar goat cheese.
