Eremita Winery is named after owner Josh Parker’s Grandmother, Madlyn Eremita, and is housed in a late 1800’s Presbyterian church, which was extensively renovated by Josh himself with a passion and attention to detail. Using repurposed materials, he has created a unique space with an old world feel right in the heart of the Finger Lakes, in 2010. His vision for reclaiming the abandoned church, and turning it into a space for wine tastings came to fruition at the completion of construction in June 2011. Eremita opened for tastings on August 23, 2011. The main bar, built in the 50’s, came from Medina, NY. The centerpiece wine rack has been home to this church all along, and used to house the organ flutes. Old roof slate from a demolished church in Utica, NY, covers the new walls. While barn doors and drift wood from nearby Seneca Lake add character. Wooden barn beams create a cozy indoor beer garden, with a hand painted mural of the Finger Lakes of New York. Josh was able to maintain and showcase the original beauty of the church’s vaulted ceilings and stained glass windows, yet add his own personal touch. The result is a unique experience of great wines, history and passion.

Tasting & Pairing Notes: A crisp, fruit forward chardonnay with a long clean finish. The bright acidity makes this a versatile wine when pairing with a wide variety of food items. Our Un-Oaked Chardonnay goes particularly well with cream based soups or pastas, white fish dishes and grilled vegetables.

Tasting & Pairing Notes: Floral, ripe peach nose, brightly acidic, fresh grapefruit and stone fruit on the palate with a clean finish. Beautifully paired with seafood dishes, grilled white meats, vegetable dishes, blue cheeses, and wonderful on it’s own.

Tasting & Pairing Notes: Fresh fruit flavors with an intense floral aroma and hints of ripe peach and star fruit on the palate. Pair Gewürztraminer with a wide variety of foods including asian inspired dishes, sea foods, white meats, and spicy dishes. The hint of sweetness in this Gewürztraminer makes it a wonderful pairing with grilled fruit desserts.
